The story
Gilles Varone in Sitten, Switzerland, is a modern cuisine restaurant at Rue du Stade 5b in Savièse, and it holds two Michelin stars (2026) for its excellent cooking.
The kitchen works mainly with Valais ingredients, and the open kitchen sits in a plain room with wooden tables. Recent guide reports describe hay-steamed asparagus with light hollandaise and hazelnuts, and grilled zander with coriander beurre blanc. Lamb comes three ways: roasted on a skewer over spruce wood, as a royale, and as a stuffed fillet with fresh mint.
Lise Donier Meroz, named Gault&Millau Young Sommelier of the Year, pours Valais wines alongside alcohol-free drinks. A clear asparagus drink is one example, made to pair with the asparagus course. The restaurant earned 17 points in Gault&Millau (2026), with service overseen by Letizia Varone.
