The story
Damien Germanier is at Rue du Scex 33 in Sitten, where the kitchen serves Valais brasserie cooking and holds a 2026 Gault&Millau entry. After closing its earlier fine-dining room in March 2025, the chef reopened on the same site as the Basique Néo-Bistrot.
According to the chef's website, Damien Germanier spent more than twenty years leading a Michelin-starred restaurant in Sion. Gault&Millau describes him as an idiosyncratic, heavily tattooed cook who works with local ingredients. He has said that independent chefs have a hard time in Valais outside the ski resorts, and he chose to reopen rather than stop.
The brasserie dishes praised by Gault&Millau include leek vinaigrette, veal blanquette, and poultry with vin jaune and morels. The homemade bread stays crisp, and the light desserts include a reinterpreted pear with vin chaud. The reviewer noted that the classical training still shows in the cooking.
Guests can drop in for coffee, an apéro, or dinner at the bistro. The same kitchen teaches cooking classes for every level, and the business also offers private chef visits and catering across Valais. The Smart Green Guide lists the restaurant with three radishes for 2026.
