The story

Sushimama sits at Wolfova ulica 12 in Ljubljana, a Japanese restaurant that Gault&Millau scored 14.5 in 2026. The kitchen works in traditional Japanese cuisine, and the restaurant describes its cooking as traditional with a modern touch.

Chef and cooking style

Itamae Hiroki Ishikawa leads the kitchen. The restaurant names perfection, purity and discipline as the principles behind his work. He has been with Sushimama for more than 15 years, and the restaurant says guests can expect precise cuts from his hands.

Dishes reviewers tried

Gault&Millau's reviewer started with tempura prawns, which arrived firm and fresh. For mains, the table chose teriyaki chicken and the shou platter, a mix of nigiri and rolls with salmon, tuna, sea bass and prawn. The mango pudding was light, while the Fuji Yama, made with hazelnut sponge and coffee caramel, had a deeper richness.

The room and terrace

The interior is minimalist, and seats face the open kitchen. In summer, service extends to a street-side terrace. Staff help guests with both food and wine choices. The Michelin Guide lists Sushimama as Recommended for 2026.

History

This longstanding Japanese restaurant in the city centre has built its reputation over two decades on consistent quality. The minimalist interior, with views of the open kitchen, adds to the restaurant’s appeal, while in summer the experience extends to the street-side terrace. The menu remains faithful to Japanese classics. The friendly staff are adept at guiding guests through the menu, whether they are uncertain about their food choices or wine selection. To begin, tempura prawns arrived at the table, impressing with their firmness and freshness. For the main course, we chose chicken with teriyaki sauce and the shou platter, featuring an assortment of nigiri sushi and sushi rolls with salmon, tuna, sea bass and prawn. Sweet temptations are difficult to resist here, so we compared the mango pudding and the Fuji Yama dessert, made with hazelnut sponge and coffee caramel. The former impressed with its lightness, while the latter offered deeper, richer flavours. Sushi enthusiasts will find both tried-and-tested classics and more indulgent combinations, while those who prefer hot dishes will appreciate the varied selection of meat, fish and noodle dishes. All of this is united by what sets Sushimama apart most clearly: consistency, fresh ingredients, precise preparation and quality that never wavers.
