The story
Gostilna AS stands at Čopova ulica 5a in Ljubljana, where a Mediterranean kitchen has been run by the same family since the late 1990s. Gault&Millau awarded the restaurant 15 points in 2026, and its seafood and homemade pasta are the reason many guests return.
The restaurant traces its roots to Dutovlje on the Karst, where owner Svetozar "Pope" Raspopović first served seafood pasta in the late 1980s. The kitchen moved to central Ljubljana later, and it still cooks with the same approach: simple ingredients, minimal fuss, and sauces that stay out of the way of the fish. Gault&Millau describes the pasta as distinctly homemade, polished but never fussy.
Start with the tuna tartare, Adriatic bluefin with avocado purée and wasabi, or the raw Adriatic shrimp. The paštica with Karst sausage and saffron is the house pasta, and the pappardelle with venison ragù is a richer alternative. Meat lovers usually order the 30-day dry-aged Karst beef fillet or the tomahawk steak. Save room for the blueberry cake, which Gault&Millau singles out among the desserts.
The summer-winter garden is an elegant terrace in the city centre with a view of Ljubljana Castle, and it also suits private events. The wine list pairs Italian and French bottles with Slovenian regional wines, and the sparkling section includes several champagnes. Michelin listed the restaurant as Recommended in 2026.
FACT-BOOK NOTE: The HARD EVIDENCE section contained only the crawl status and page bucket, so the article relies on the CANONICAL address and trophies plus dish names and history taken from the Slovenian site excerpts, translated and paraphrased into English. Gault&Millau's "15" is written as a points score, and the Michelin entry is rendered as "Recommended" since the source spelling is inconsistent.
