The story
JAZ by Ana Roš sits at Čopova ulica 5a in Ljubljana, a European contemporary restaurant built around plates passed across the table. Gault&Millau rated it 14.5 in 2026.
JAZ opened in 2023 in the AS Boutique Hotel, above the historic Gostilna AS. Ana Roš, whose Hiša Franko was the first Slovenian restaurant with three Michelin stars, calls it her living room rather than fine dining. The day starts with breakfast and runs into an evening with music and cocktails. The Michelin Guide listed JAZ as a recommended restaurant in 2026, and counter seats sit alongside the tables.
The modern cuisine here leans on Ljubljana's markets and local producers. Ana's favourite Waldorf salad pairs apples and celeriac with lovage oil, walnuts and a kefir dressing. Her vitello tonnato comes with tuna mayonnaise, capers and pumpkin seeds. A pasta dish links the Adriatic and Asia, with scampi, kaffir lime and lemongrass.
Among the mains are sea bass with orange emulsion, venison loin, and a veal schnitzel with mashed potato made to Ana's mother's recipe. The menu changes regularly.
Desserts include a Bovec doughnut filled with dried pear, a Caprese cake with hazelnuts and citrus, and ice cream of kaymak and honey. Wine pairing is available, and the bar pours house cocktails for the evening.
