The story
B-Restaurant in Ljubljana serves modern cuisine at 59 Slovenska cesta, on the top floor of a five-star hotel. Gault&Millau awarded it 14 points for 2026, and the room's floor-to-ceiling windows overlook the rooftops of the capital.
The menu is built on Mediterranean cooking, with locally grown ingredients given the leading role. Chef Komnen trained in Belgrade, worked at London's Ritz, and gained experience in Montenegro before arriving here. He reworks classic Slovenian recipes with a modern approach.
The braised sea bass fillet comes with young spinach and fresh avocado. The fish stays moist, and the lightly sautéed spinach adds earthy notes. For dessert, a toffee caramel creation pairs hazelnut crunch, chocolate glaze and fig ice cream.
