The story
Georgie Bistro is a contemporary restaurant at Čufarjeva ulica 5 in Ljubljana, where chef Gregor Jelnikar and his team cook a seasonal menu. Gault&Millau awarded it 14.5 points in 2026, and Michelin lists it as Recommended in the same year.
The menu follows the season and changes often. Local ingredients from trusted suppliers form the base of each dish. The kitchen runs bistro lunches, small savoury snacks and tasting dinners from the same team, so a weekday lunch and a longer evening meal show the same approach.
Gault&Millau singled out the cacio e pepe, a reworking of the Italian classic. Turnip is dehydrated and then rehydrated, then served with Jamar cheese foam, sunflower seeds and a blend of peppercorns. Meat eaters tend to look to the glazed beef cheeks, which the same guide names as a highlight.
Small tables, a long banquette, white walls and a high ceiling shape the dining room. The wine list leans toward naturally produced and organic Slovenian bottles, and the bar pours craft beer and kraft cocktails. Sourdough bread is baked fresh, and its smell is part of the meal before the first course arrives.
