The story
Tres is a modern cuisine restaurant in Rotterdam, at Vijf Werelddelen 75 in the Entrepotgebouw on Kop van Zuid. Gault&Millau awarded it 16.5 points in 2026, and the menu is built around Dutch ingredients that follow the seasons.
Chef Michael van der Kroft and hostess and sommelier Emy Koster run the restaurant together in a former jazz cellar beneath the building. The kitchen sources from small-scale farmers, fishermen and artisans. Ingredients are fermented, aged, dried and steamed, and the team makes its own garums, miso and kefir.
The set menu changes with the seasons, but a few preparations come up again and again. One is a pear cooked for two days and lacquered eight times with homemade broad bean miso. Another is a savory spekkoek of celeriac and pine cone served with elderflower blossom sauce. Lekker500 named the restaurant to its Top 500 list for 2026, singling out a tortellini filled with squid, blue berry and walnut.
The room is dark and vintage, with a counter around the open kitchen so guests can watch the plates come together. Tableware is reset for each course, using hand-blown glassware and custom ceramics. Alcoholic and non-alcoholic pairings are available, and the homemade juices are based on fermentation, kefir or kombucha.
