The story
Restaurant Darwin at Douvenrader Allee 1A in Heerlen serves international fine dining, and Gault&Millau awarded it 14 points in 2026. Chef Daan van der Wielen leads the kitchen under the tagline Evolutionary Gastronomy.
Van der Wielen comes from Boxtel and settled in South Limburg for love, then fell for the region too. His starting point is world cuisine rather than a fixed idea of the ideal plate. He cooks with the seasons and local suppliers, and he likes to use a product from head to tail. Dishes are refined continually, which is what the tagline promises. The Michelin Guide lists Darwin as Recommended for 2026.
Dinner centres on a six-course Charles menu. A recent version opened with brook herb, cucumber, liquorice root and dill, then moved to river crayfish with tomato, black olive and pernod. Lamb with hummus, sumac and white asparagus followed, and rhubarb with strawberry, pâte bretonne and tarragon closed the meal. The Galapagos menu (Flora) follows the same arc for vegetarian guests. At lunch, The Origin offers two or three courses.
Pauline builds the alcohol-free pairings. She sometimes echoes a flavour already in the dish, such as ginger, and sometimes sets a counterpoint, like a sour note against bitterness. A wine pairing is available per course. The dining room seats 34 in a monumental building. When the weather allows, lunch and the start of dinner move to the terrace, with a view over the Terworm nature area.
