The story
De Leuf, at Dalstraat 2 in Ubachsberg (listed under Heerlen), is an Asian-French restaurant that earned one Michelin star for 2026. The Van de Bunt family runs the farmhouse restaurant in the South Limburg hills, with the kitchen led by chef Robin van de Bunt.
Robin cooks with his childhood friend and sous-chef Thijs Gerards, and their style grew out of a shared trip through Asia. French technique remains the base, with Eastern flavors added on top. Tuna tartare arrives with wasabi and sakura, and the amuses include a gadogado bite shaped like a peanut. Gault&Millau awarded the restaurant 17 points for 2026, noting that the renewal shows in small details throughout the room.
The signature dish, "Like father, like son," honors Robin's late father Paul van de Bunt. Paul's classic version uses seafood and lemongrass sauce, while Robin's version adds pho, dashi beurre blanc, and lavender cream. The "Scents of the Sea" oyster shell is presented in a cloud of nitrogen. Lamb has appeared on recent menus in several preparations, including a fillet with morel and goat cheese.
Sandra van de Bunt runs the front of house as maître, while her daughter Michelle pours and pairs as sommelier and certified sake sommelier. The dining room uses natural materials and calm, Zen-inspired details. Groups of four to fourteen can book the Yukari room, a name meaning connection in Japanese.
