The story
Codium, at Vlasmarkt 6 in the center of Goes, is a seasonal International restaurant that earned a Michelin star in 2026. Chef Wouter Kik cooks with Zeeland produce, and host-sommelier Jean Luc Etienne leads the dining room.
Before opening Codium, Wouter Kik cooked at De Kromme Watergang in Hoofdplaat. His style is light and refined, built on sharp acidity and strong color. Jars of pickles and ferments sit on the kitchen counter, and their tang turns up across the courses.
Seaweed runs through the early courses. One amuse-bouche is a savory egg custard with a broth of smoked seaweed, and the seaweed crisps come with three emulsions. The turbot is confited in olive oil, then rests on ribbons of zucchini infused with basil oil. Dessert often features honey from a local beekeeper in Kapelle, served as ice cream with honey cake and yuzu gel.
Anouk van der Sande designed the light, stylish room. Jean Luc Etienne selects the wine pairings, and sommelier Laura Stam curates the non-alcoholic ones. Gault&Millau gave Codium 17 points in 2026, praising the partnership between Kik and Etienne.
