The story
SAAM restaurant at Amstelzijde 59 in Amstelveen, on the Amstel near Amsterdam, pairs a modern Dutch kitchen with South African flavours. Gault&Millau scored it 15.5 in 2026.
Jasper Hermans runs the kitchen. Margot Janse, the South African-based chef who shaped the opening menus, has since stepped down. The Spyskaart is a five-course set menu, which can be ordered vegetarian, alongside à la carte dishes. It is built on traceable local produce and indigenous South African ingredients. Lekker500 placed SAAM at 88 in 2026 and singled out the lacquered eggplant with Cape curry, ginger and sorghum, and a langoustine with crispy pork belly and mebos, the South African dried apricot.
Maître sommelier Bjorn van Aalst and sommelier Fallon Hoog Antink guide the pairings. The list covers South African bottles as well as wines from the Loire, Burgundy and Mosel. Non-alcoholic pairings are available too.
The ground floor seats 42, including a Chef's Table for up to 10. Upstairs, a U-shaped bar for 20 looks over the Amstel and can be hired privately. The terrace faces the water, and guests arriving by boat can moor at the jetty. The restaurant opened in November 2022, at the end of a historic restaurant strip.
