The story
Restaurant Showw sits at Gelrestraat 28 in Amsterdam, where the kitchen serves modern cuisine with an international range of flavours. The Michelin Guide awarded it one star in 2026, recognising high quality cooking across the menu.
Owner-chef Dorus Floris works from traditional French techniques and builds elegant, light dishes around them. Lekker500 described the cooking as bold but controlled, with unexpected combinations that still feel precise. The menu draws on Dutch produce, Spanish ingredients and Asian accents in the same meal.
A ceviche of pickled sea bass comes with brunoise white beet and a red pepper and rhubarb dressing, topped with a crisp layer of yogurt and lemon zest. Carabinero prawn arrives in a bisque with fennel, hazelnut and cayenne, served with paper-thin Spanish bread. Dutch veal loin wrapped in serrano ham is finished tableside with a veal jus that blends into the pesto beneath it.
The open dining room uses colours from off-white to chocolate brown, and white cube structures on the ceiling soften the sound. Gault&Millau gave the restaurant 15 points for 2026, praising the warm, stylish setting and staff who are relaxed yet highly professional. Co-owner and head sommelier Lendl Mijnhijmer and second sommelier Floris Aaldering let guests taste each wine before explaining it.
