The story
Aan de Poel, at Handweg 1 in Amstelveen, serves modern French cooking in the Amsterdam area and holds two Michelin stars (2026). Chef Stefan van Sprang and maître sommelier Robbert Veuger have run the restaurant together for years, with the kitchen open to the dining room.
Stefan van Sprang leads the kitchen, and his French cooking draws on international ideas. The chef's menu changes regularly and sits alongside signature dishes, daily specials and a cheese course. Guests can watch the team work from their tables, so the kitchen is part of the evening.
Reviewers have described langoustines fried until crisp with a foaming hollandaise, and monkfish pan-seared skin-side down with vongole and beurre blanc. A5 wagyu is served as both tenderloin and brisket, with a jus that reviewers single out. Dinner often ends with a classic tarte tatin and vanilla ice cream, followed by a trolley of petits fours.
Robbert Veuger's wine list runs to more than 600 labels, from Burgundy and Bordeaux to German, Austrian and New World bottles. The dining room is chic and relaxed, with tables dressed in linen and views over the water. Valet parking, private dining and gluten-free options are available.
