The story
Hostellerie Saint-Nicolas, at Veurnseweg 532 in Elverdinge just outside Ieper, is a gastronomic restaurant that holds one Michelin star for 2026. The kitchen is led by Franky Vanderhaeghe and his son Michael, and the menu draws on regional produce.
Franky and Michael Vanderhaeghe share the stoves and build their dishes around local and market ingredients. The plates shift with what the region supplies through the year. Gault&Millau scored the kitchen 15.5 in 2026 and described the pair as true chefs at heart who complement each other in the kitchen.
Sunlight falls through the natural-toned interior, and the terrace opens onto a garden with willows and an angular water feature. Wine pairings come from a worldwide cellar, and alcohol-free alternatives are available. Hotel Nicolas, a short walk away on Veurnseweg, offers six rooms for guests who want to stay overnight.
