The story
Umā is a bistronomic fusion restaurant at 8-8A Rue de la Reinette in Brussels. Gault&Millau scored it 12.5 for 2026, describing a bold French-Peruvian fusion kitchen served in a comfortable room with contemporary artistic touches.
Chef Jules-Antoine Beugniez started out in real estate before a world trip with his wife changed his path. He trained at the Ferrandi school in Paris and worked alongside chef Karen Torosyan. For the past two years he has focused on nikkei cuisine, the Japanese-Peruvian tradition that gives much of the menu its character.
The à la carte opens with langoustine tiradito in watermelon leche de tigre with aji amarillo, and a pork belly glazed with Sichuan pepper. Mains include sea bream with spinach cream, Dauphine potatoes and beurre blanc, and duck breast with leek marbré and barberry sauce. A four-course tasting menu is priced at 85 euros per person, and five courses at 100.
The dining room also hosts private events, with a business space for up to 20 guests and a separate private lounge menu. The kitchen sources from local producers through short supply chains, a principle the restaurant puts at the centre of its cooking. Michelin lists Umā as Recommended for 2026.
