The story
Franco Belge is a modern French restaurant at Langestraat 109 in Brugge, rated 14 by Gault&Millau in 2026 and listed as Recommended by the Michelin Guide the same year.
Chef Thomas Puype gives Franco-Belgian cooking a contemporary reading. Gault&Millau describes an opening bite of salmon tartare with ajo blanco foam and confit egg yolk, which sets the tone before a well-sourced saku tuna.
Dinner is a three, four or five course menu (€69, €79 and €97). A recent version listed lobster tartare with tomato and watermelon, confit cod with mussels and dashi, and Belle Flamande chicken fillet. Dessert paired cherry with chocolate, meringue and Kriekboon beer. Lunch is shorter, at two or three courses. The dining room weaves the character of old Bruges together with a sleek, modern finish.
