The story

Rock-Fort in Brugge: Seafood Bistro at Langestraat 15

Rock-Fort is a contemporary seafood restaurant at Langestraat 15 in Brugge, rated 14.5 by Gault&Millau in 2026. Chef Laurent Law cooks here with a fish-led, seasonal menu, while Eline Snijkers runs the dining room.

Chef and kitchen

Laurent Law and Eline Snijkers first won over guests in Zeebrugge, then took over Rock-Fort in late 2023. The kitchen follows the seasons and aims for a short supply chain, so products travel straight from the source to the plate. Le Fooding listed the restaurant in 2026 and noted the North Sea feel that runs through the cooking.

On the plate

Irish Mór oysters appear plain or with a sesame and soy barbecue sauce. The signature grilled langoustine sits in a dashi and lemon verbena emulsion. Other plates include shellfish and wild garlic ravioli, veal sweetbreads with truffle sauce and celeriac, and a homemade Snickers bar to finish. Cheeses come from Van Tricht.

Menus and wine

Dinner is a set menu of three to seven courses, priced from €59 to €133. Current dishes include hamachi with green strawberry, and North Sea fish with asparagus. The wine list mixes classic and natural bottles chosen to suit the clean flavours of the kitchen.

The room

The space is small, and mirrors along the walls make it feel larger. Lunch is served Tuesday to Friday, and dinner Tuesday to Saturday.

Right down to their logo of a fish seemingly in motion, a North Sea breeze is a-blowing at Rock-Fort. Here, the proximity to the coastline is more than geographic: Eline Snijkers (in the dining room) and Laurent Law (in the kitchen) first delighted customers at Zeebrugge, before heading back to dry land and taking over Rock-Fort in late 2023 – a tiny space that feels bigger than it is thanks to the mirrors lining the walls. Their plates elicit sighs of pleasure from the crowd, like the Irish Mór oysters served plain or with a sesame and soy barbecue sauce; the house’s signature grilled langoustines bobbing around in a dashi and lemon verbena emulsion; shellfish and wild garlic ravioli; veal sweetbreads with truffle sauce and celeriac; before the cheeses sourced from Van Tricht, and a revisited homemade Snickers bar for dessert. // Mireille Flocon
