The story
De Jonkman in Brugge is a seafood-led fine dining restaurant at Maalsesteenweg 438 in Sint-Kruis, and it holds two Michelin stars for 2026. The kitchen builds its menus around North Sea fish, including species that rarely reach a restaurant plate.
Filip Claeys founded the NorthSeaChefs collective in 2011, and his cooking carries the same aim. He works closely with several fishermen, and many of his catches come from the boat Z571. Gault&Millau gave the restaurant 18 out of 20 for 2026, praising how he gives forgotten fish species a place on the menu.
The seasonal menu, called "Het seizoen volgens Filip Claeys", includes langoustine, catch of the day from the Z571, Holstein beef and Duroc pork fillet. Dessert ends with a crêpe normande, "Ode aan mijn vader Bob Claeys", a nod to his father's restaurant. On Saturday evenings the seasonal menu is the only option, while the à la carte is served on other days and Saturday afternoons.
The dining room has wooden accents and clean design lines, and the atmosphere feels familiar and relaxed. Sandra Meirlevede welcomes guests as host alongside Filip. The sommelier can guide you through the wine list, and there are small tasting portions, top wines by the glass through a Coravin system, beer pairings if requested at booking, and non-alcoholic pairings.
