The story
Bistro Rombaux serves modern French cooking at Moerkerkse Steenweg 139 in Sint-Kruis, just outside the centre of Brugge. Gault&Millau awarded it 13.5 points in 2026, and the restaurant is also listed in the Michelin Guide as Recommended.
Chef Pieter-Jan Rombaux builds the menu around a deliberately short card that changes with the seasons. He works with quality produce and shows respect for each ingredient. Gault&Millau describes the cooking as generous bistronomy, a relaxed style that still keeps the focus on the plate.
The menu has featured langoustine with Granny Smith apple, beurre blanc and green herbs, and babykreeft (baby lobster) à la nage with young carrot and leek. Mains have included Mechelse Koekoek, a grilled Mechelen chicken served with mushroom and a risotto croquette, and a thin Holstein beef tenderloin with lettuce, choron sauce and baby potatoes. Desserts lean fruity, such as red fruit with ricotta, Riesling and granité.
