The story
Brasserie Frantzén serves modern cuisine at Atlantis, The Palm, Crescent Road, The Palm Jumeirah, Dubai, and carries a Forbes Travel Guide Four-Star rating for 2026. Chef patron Björn Frantzén leads the kitchen.
Dinner can begin with a Swedish oyster in kohlrabi broth with wasabi and salmon roe. The Scandinavian sushi follows, including eel gunkan with foie gras, apple and hibiscus. Mains come from the fireplace: côte de boeuf with smoked bone marrow, or rock lobster with coriander, curry and brown-butter hollandaise. The chef's signature turbot arrives with butter sauce, anchovies, caviar and dill.
Five chef's tables look straight into the open kitchen. Elsewhere, Scandinavian-style booths sit beneath upside-down chandeliers and a sculptural ceiling, with hand-painted murals on the walls. A resident DJ keeps the evenings lively. Smart casual is the dress code, and all ages are welcome.
The walk-in Candy Room, marked with the brand's bear print, lets guests choose from strawberry and shiso macarons, blueberry pâte de fruit and miso and chocolate fudge. Pastry chefs assemble the selection into a dessert for the table. At the bar, the Rhubarb cocktail pairs The Botanist gin with bay leaf and dessert wine. The cellar holds 1,900 labels, and the Michelin Guide listed the restaurant as Recommended in 2026.
