The story
Silex, at Freyastrasse 3 in Zürich's 8004 postcode, is a modern European restaurant with a wine focus, and Gault&Millau gave it 15 points in 2026. The kitchen works from a menu that changes regularly, served à la carte or as a tasting menu.
British head chef George Tomlin cooked at The Town Mouse in Melbourne and The Clove Club in London before opening in Zürich in November 2021. The kitchen works with farmers and suppliers who farm organically and sustainably. Gault&Millau notes that the Swiss small-scale producers behind the ingredients are chosen with care.
The Einsiedler Gougères are a house classic among the snacks. Lardo is paired with sourdough and honey, and the house lamb sausage has drawn praise. A Duroc pork loin arrives with braised apple and a neatly cut hasselback potato. The meal closes with a glace flavored with bread crust, a bold choice that the critics found successful.
The terrace is open when the weather allows, and a few seats stay free for walk-in guests who come for snacks or drinks. The wine list leans on artisanal producers who work with minimal intervention. Sommelier Jean-Denis Roger, who trained in France before working in Zürich, shapes the selection alongside general manager Julia von Meiss. Michelin lists Silex as Recommended for 2026.
