The story
Restaurant Schlüssel in Luzern cooks modern Swiss cuisine at Oberdorfstrasse 5, and Michelin awarded it one star in 2026. The kitchen works from a classic French base, with regional produce and a light, precise touch.
Roger Kalberer took over the kitchen from his father, Seppi Kalberer, who cooked here for 42 years starting in 1974. His style keeps the French classics but adds sharper contrasts and fresh seasonal ideas. Gault&Millau gives the restaurant 17 points for 2026.
Scallops are seared briefly, served tartare-style in kohlrabi pockets, and set in a sour ceviche broth. Pike-perch sits on champagne beurre blanc with beetroot cubes and a crisp Jerusalem artichoke chip. The braised veal cheeks in red wine, first made by Seppi Kalberer, still anchor the menu with potato purée.
The dining rooms are in a patrician house built in 1811, with cosy stuben. The cellar holds Burgundy and Bordeaux bottles alongside many wines from the Bündner Herrschaft. Marianne Blum leads the service, and dessert is Felchlin chocolate with sea buckthorn ice cream.
