The story
de MATOS at Burgerstrasse 5 in Luzern is a Japanese and Spanish restaurant that holds a Michelin star (2026). Oscar de Matos and Nadine Baumgartner run the room, and the kitchen works with fermented products from a large pantry, changing with the seasons.
Oscar de Matos brings his Spanish roots to the opening courses, with Ibérico ham from Salamanca, sardines with celery and gilda skewers. The Japanese influence shows in dishes like kingfish with fermented strawberries, white grapefruit, wasabi and white soy. His beurre blanc, lifted with chamomile, is a sauce Gault&Millau considers to have cult potential, and the guide awarded the restaurant 16 points in 2026.
Dinner is a fixed menu at 148 Swiss francs, a format the small kitchen requires. Asparagus arrives finished over a Bunsen burner with a passion fruit, vanilla and tarragon sauce, and guinea fowl comes with wild garlic sabayon. Wine pairing is part of the offer, and a café and wine bar operates alongside the restaurant.
