The story
La Brezza is the Michelin two-star restaurant of Hotel Eden Roc, at via Albarelle 16 in Ascona, Locarno, Switzerland. Its modern Mediterranean kitchen received two Michelin stars in 2026, and Gault&Millau awarded it 19 points the same year.
Chef Marco Campanella, 33, cooks with taste as the priority. He sometimes spends three days on a single sauce or deep fond, and he doses his salt brine differently for each product. Trips to Japan and Korea feed his ideas, and a Korean influence shows up in a gochujang bisque.
Lostallo salmon is dry-cured and marinated with celery, apple, dill and coriander, then served as sashimi on a mini brioche. Norwegian langoustine rests in brine for a quarter hour, then arrives with a lemon foam and that gochujang bisque. Black cod is marinated for 45 minutes, steamed at 42 degrees and finished in a dashi beurre blanc with the season's last white asparagus. The Sisteron lamb, aged for several extra weeks, is used almost whole, from the saddle to the belly.
