The story
Le Rossignol sits at Avenue du Léman 36 in Lausanne, between the city and Pully, and serves classic cuisine with Mediterranean accents. Gault&Millau rated it 15 in its 2026 guide.
Willy Rossignol has led large brigades at Lausanne Palace, Le Mirador, la Ferme de Marie and la Bastide de Marie. He and Mara opened the restaurant in 2017. Seasonality and sustainability guide the menu, and Michelin lists the house as Recommended for 2026. Mara runs the dining room, which Gault&Millau credits with Italian charm.
Morels come filled with crayfish mousse, alongside pea purée and a poultry jus finished with vin de paille. Green asparagus meets grapefruit, pata negra and saffron hollandaise. Brittany lobster is poached in bitter almond broth, and the same broth flavours a fregola sarda risotto with rhubarb. The lamb arrives two ways: a tender noisette in a wild garlic crust, and braised shoulder wrapped in a potato cake.
Lunch leans light, while dinner turns more refined. The wine list is broad. A small flowered terrace gives shade in warm weather, and a private room seats eight.
