The story
L’Appart, at Rue de Bourg 29 in Lausanne, cooks modern cuisine on a single changing menu, and Gault&Millau raised its rating to 16 points in 2026. The dining room sits on the first floor of an old building and looks out toward the cathedral.
Luis Zuzarte leads the kitchen, and the menu changes daily around what partner producers deliver. Nothing is announced in advance. The restaurant describes its approach as free, responsible and centred on the product, with the seasons dictating the choices. Vegetarian guests and other diets are accommodated when they are mentioned at booking.
The Gault&Millau review describes up to seven courses, opening with Swiss crayfish in mayonnaise with celery and mousseux jelly, brought to the table by the chef himself. Agnolotti come with champagne emulsion, bisque and apple raisinée. Pike-perch is smoked lightly and served with a beurre blanc and blood orange. The evening menu is priced at 155 CHF, with wine pairing at 62 CHF.
