The story

L'Atelier Robuchon Geneva: French Cooking With Two Michelin Stars

L'Atelier Robuchon, at Quai Wilson 37 in Geneva, is a French kitchen that earned two Michelin stars in 2026. The restaurant occupies a luxury hotel palace on the lakefront, and its menu carries the Joël Robuchon method into the Geneva dining room.

Chef and room

Head chef Olivier Jean adapts the Robuchon style to Geneva's produce and palate, according to Gault&Millau, which awarded the restaurant 17 points for 2026. The room uses rosewood panels in red and black, with seats facing the open kitchen. Vegetables feature strongly on the menu, but the fish and meat are just as assured.

Standout dishes

Several plates stand out in the guide's descriptions. A crab in lobster aspic with caviar, a tender langoustine with goatsbeard and coral sabayon, and a Gruyère soufflé with intense black truffle all recur. Sea bass is poached in olive oil and served with musky squash and a shellfish sauce. The beef Rossini is finished at the table with port sauce.

Desserts

Pastry is led by Titouan Claudet, who was named Gault&Millau Pastry Chef of the Year 2025. His lemon mousse, made in a siphon, sits on grapefruit sorbet with orange compote. Mango and sharp passion fruit arrive in a meringue shell with vanilla.

Gault&Millau — 15

In the luxurious hotel palace at a prime location on Quai Wilson, head chef Olivier Jean oversees two restaurants designed by renowned chef Joël Robuchon: alongside L'Atelier, he also runs Le Jardinier, an elegant venue with a terrace and magnificent views of Lake Geneva and the Alps. While vegetables dominate the menu in keeping with current trends, the fish and meat offerings are equally impressive. The meal began with a well-balanced soup blending butternut squash, ginger, and carrot. Next came a captivating chestnut cream accompanied by Gruyère foam, cardamom, celery, and truffle. The delicate zander, served under a cloche, was harmoniously complemented by turmeric and smoked carrot. An exquisite lingonberry chimichurri sauce perfectly accompanied the succulent beef, served with carrots, Vitelotte potatoes, and truffle. Titouan Claudet, named GaultMillau’s Pastry Chef of the Year 2025, left absolutely nothing to be desired with his desserts: an exotic and refreshing blend of mango, coconut, yogurt, and yuzu, alongside a breathtaking composition of chestnuts, chestnut honey, meringue, and blackcurrants.
