The story
L'Aparté is a modern French restaurant at Rue de Lausanne 43 in Geneva, inside Hotel Royal, and it holds one Michelin star in the 2026 guide. The dining room is small, and the cooking is personal.
Armel Bedouet, a native of Brittany, serves guests himself and explains how each plate is made. Gault&Millau gave L'Aparté 18 points in 2026 and named him its "riser of the year". The kitchen sits between modern French and international influences, and the carte blanche menu leaves the choices to him.
The carte blanche opens with a spider crab tartlet with white miso and marinated cucumber pearls. Spiny lobster follows, paired with dry-cured Valais bacon, a butternut sauce and bisque foam. Brill is cooked in nori and served with a buckwheat tuile and dill oil. Pink fillet of Austrian chamois comes with beetroot and a pepper sauce.
Dessert might be a chestnut trompe-l'oeil built from coconut emulsion and vanilla oil. Another is an apple from a farm in Versoix, set against black tea ganache and apple granité. Wine pairing is offered with the menu, and Gault&Millau found nothing to fault in it.
A facelift made space for a few more guests, though L'Aparté is still an intimate address. The tags also list a chef's table and flexible reservations.
