The story
TYGLE Gdańskie at Ul. Chmielna 10 on Wyspa Spichrzów in Gdańsk is a modern Polish kitchen that Michelin has recommended for 2026. The name nods to the city's history as a melting pot of trade routes and spices, and the menu keeps that mix of local ingredients and outside influences.
Chef Michał Stężalski builds the menu around regional farms and small producers. Polish cuisine is presented in a modern interpretation, with suppliers named on the menu: Kashubian strawberries, Pomeranian wild boar, Pniewy beef, Gdańsk flour and Kashubian mead. Gault&Millau gave the restaurant 13.5 for 2026 and praised recipes that draw on old Pomeranian traditions.
The Pomeranian trout comes with elderberry, marinated melon and charcoal. Duck breast is served with liquid foie gras, roasted apple with black pudding and fermented beetroot. For dessert, the TYGLE cheesecake pairs sea buckthorn with white chocolate and Gdańsk milk.
The dining room is minimalist and industrial, but warm light from large bulbs softens it. A glazed terrace looks out over the Motława embankment. The restaurant is dog friendly and hosts company dinners, with 110 seats and private areas for 56 guests indoors and 44 in the orangery.
