The story
True is a surf & turf restaurant at Chmielna 10 on Granary Island in Gdańsk, listed as Michelin Recommended in 2026. The kitchen is built around meats and grills, with seafood sharing the plate.
Steaks are cut on site and priced by weight. The list runs from tenderloin and entrecôte to dry-aged cote de boeuf, T-bone and tomahawk, with Black Angus from the USA, Polish Hereford and Japanese Wagyū among the origins. The surf & turf section pairs lobster tail with entrecôte, or a giant prawn with tenderloin. There is also a trio of tartares made from beef, tuna and seriola.
Chef Rafał Kopicki works with rare fish, shellfish and well-aged meats, and looks for balance rather than excess. The menu shifts gently with the seasons and gives local ingredients a place beside imports. Gault&Millau scored the restaurant 14 in 2026.
Stone, wood, leather and metal define the interior, which reads as modern and a little maritime. The terrace looks over the Motława toward Gdańsk's old landmarks. A glazed orangery, a closing roof and heating keep it usable in poor weather. Behind glass doors, a private VIP room has its own entrance and can be closed off from the main dining room.
