The story
Fino serves modern cuisine at Grząska 1 in Gdańsk, and Gault&Millau scored it 15 in 2026. The restaurant occupies one of the Old Town's historic tenement houses.
The menu is short and carefully built, with enough range for meat eaters and vegans alike. Chef Jacek Koprowski likes to slip fennel into his own dishes and jokes that his surname is the reason. It appears as a delicate sorbet intermezzo, and again in the tasting menus, one of meat and fish, one entirely plant-based. Michelin lists Fino as Recommended for 2026.
The Gault&Millau guide praised the tartare, served with lovage mayonnaise and wild garlic capers. Cauliflower arrives in four variations with truffle ice cream. The duck breast comes with carrots puréed, grilled and pickled in slices. For dessert, a chocolate-truffle ganache is paired with chanterelle ice cream and forest fruit jelly, moderately sweet and varied in flavor.
The interior is small and intimate. Chair upholstery in three colors makes the dining room feel divided into sections, while gilded lamps give off a warm light and two large antique mirrors hang on the walls. The wine list runs to more than 200 labels from around the world, Poland included. On Thursdays, Fridays and Saturdays, only the tasting menu is served.
