The story
Eliksir, at ul. Hemara 1 in Gdańsk, is a modern cuisine restaurant where each course is matched with a cocktail, and Gault&Millau gave it 14 points for 2026. The restaurant sits in Wrzeszcz, close to the city centre, and combines a restaurant, cocktail bar, event space and cigar room under one roof.
Paweł Wątor is co-owner and head chef. He previously worked as deputy head chef at Amber Room, in a London restaurant group, and at the Hilton in Gdańsk. The seasonal menu changes every three months and draws on regional producers, including fish from a Zielenica farm and coffee from a Tricity roastery.
The meal starts with homemade bread served with lard or browned butter. The nie/żurek, built on fermented celery and local buttermilk, is one of the more distinctive dishes. A tasting menu is available with cocktail pairings in alcoholic or non-alcoholic versions, which is the most direct way to experience the food pairing concept.
Eliksir occupies the Commandant's Villa on the Garnizon grounds, dating from 1882. Original brick walls sit alongside a modern layout. The long bar at the entrance holds several hundred bottles, and guests can watch the bartenders at work. Michelin lists the restaurant as Recommended for 2026.
