The story
Noble Kitchen, at Deutersestraat 39B in Cromvoirt, near 's-Hertogenbosch, is an Asian-leaning restaurant that earned a Michelin star in 2026. It sits on the Bernardus Golf complex, where the dining room looks over the fairways and the menu draws on Japanese and French technique.
Edwin Kats, the chef-owner, works alongside Tom Schoonus, who has led the kitchen since 2019 and now oversees both restaurants as executive head chef. The cooking is modern French with an Asian touch. Much of the work happens on the robatayaki grill, a Japanese charcoal grill, with an Ofyr used for outdoor cooking.
The menu leans toward finger food, including sushi, sashimi, yakitori and dim sum, alongside multi-course options. A recent hamachi tartare came with green apple, radish, hazelnut and horseradish. Turbot arrived over root vegetable purée with a kimchi-based beurre blanc. For dessert, one 2025 meal ended with rice pudding, popped rice crunch and pandan ice cream.
