The story
Noble Gastro House, at Wilhelminaplein 1 in 's-Hertogenbosch, cooks contemporary French dishes in a renovated villa on the edge of the city centre. Gault&Millau gave it 14 points in 2026, and the restaurant has been known as Noble since chef Edwin Kats opened it in 2013.
Edwin Kats, an SVH Meesterkok, leads the kitchen with chef Bart Klomp. Recent Lekker500 coverage places chef Lars Albers at the stove as well, after his earlier years at Noble. The menu is built from smaller dishes, so guests can share plates or order their own tasting sequence.
The signature bite is toasted brioche with smoked eel, crème fraîche, chives and caviar. In a 2026 Lekker500 review, the monkfish with beurre blanc, grape, mussel meat and chive oil stood out, with a soft centre and a well-seared crust. The cheese course, with Brie de Meaux and a local herb-infused cheese, earned praise in an earlier review, and Lekker500 placed the restaurant in its Top 500 for 2026.
The sunroom and terrace look out over the winding Dommel and the Bossche Broek nature area. A large glass wine room greets guests on arrival. The semi-open kitchen sits beside a generous bar, so the cooking stays in view from the tables.
