The story
Hendrik van Maurick serves French-based cooking in a medieval castle at Maurick 3, Vught, close to 's-Hertogenbosch. Michelin listed it as Recommended in 2026, and the kitchen builds on classic French technique with Asian and other international touches.
Niek van Lieverloo leads the kitchen as culinary director, while co-owner Klaas van Leengoed oversees hospitality. The menu runs à la carte and in set menus, with a few small bites offered before the first course. A Chef's Table lets a group sit inside the kitchen for a multi-course evening, with chef Jop Schreurs working alongside the team.
Recent reviews single out mackerel sashimi with cucumber rice, dill and vinaigrette, and a lamb fillet with asparagus, confit potato and a rich jus. The dining room pairs castle character with more contemporary touches. A painted portrait of Hendrik van Maurick on one wall keeps an eye on the tables.
