The story
Auberge de Veste sits at Uilenburg 2 in 's-Hertogenbosch, where a French kitchen with international touches earned a place in the Lekker500 Top 500 in 2026. The Michelin Guide lists it as Recommended for the same year. Owner Ruben Coonen runs the restaurant as chef, host and sommelier.
Coonen has owned the restaurant since 2006 and cooks French-classical dishes with seasonal produce. He adds modern and international ideas, such as a gyoza of eggplant, kombu and nori among the amuse-bouches. Dinner is a surprise menu of three to six courses, so the kitchen can work with whatever is freshest.
Recent reviews mention sous-vide anglerfish cheeks with green herbs, a fermented sauce and salted lemon cream. Lamb fillet arrives with potato millefeuille and za'atar cream. Dessert might be rhubarb with a rhubarb-ginger sorbet. Earlier menus also featured Tête de Moine shaved into a flower over apple and macadamia nougatine.
Coonen imports many of the wines himself, and the list changes often. Pairings run from Burgundy to a German white made from red Merlot grapes. The dining room is classic, with linen-covered tables and comfortable armchairs. In good weather, the terrace looks onto the canal.
