The story
Japans restaurant Shiro, at Uilenburg 4 in 's-Hertogenbosch, cooks Japanese kaiseki and holds a 2026 Gault&Millau score of 12. The Michelin Guide also recommends the restaurant for 2026.
The house style is kaiseki-ryori, a traditional multi-course Japanese dinner that balances flavour, texture, appearance and colour. The kitchen works with fresh, seasonal ingredients and plates each course on ceramics chosen to suit the season. Leaves, flowers and edible garnishes shaped like plants or small animals often appear on the plate. Gault&Millau points to menus that follow the seasons, with original details such as twigs and leaves on the dishes.
Friday and Saturday evenings, and public holidays, are served as a course menu only. The restaurant also offers a notable sake list and hosts private parties.
