The story
In Den Rustwat, at Honingerdijk 96 in Rotterdam, is a French restaurant housed in a 16th-century inn on the edge of the city. Gault&Millau gave it a score of 15 in 2026, and Lekker500 ranked it 93 in its 2026 list.
Owner-chef Marcel van Zomeren cooks a light, refined take on French classics with global influences. Many ingredients come from Voedselbos de Biesbosch and Landzicht Biologisch. Reviewers often point to the sweet, sour, salty, or bitter edges that keep each course sharp.
A ripe avocado is grilled over open flame, peeled, and served warm like a small bowl, filled with several preparations of onion and finished with sesame dressing. Pan-seared sea bass comes with ponzu-soy and briny seaweeds. The Luma entrecôte, aged with natural mold, is served with peas, wild garlic, and an aromatic fenugreek sauce.
