The story
In de Keuken van Floris is a fine dining restaurant at Honingerdijk 259 in Rotterdam, the Netherlands, and it holds 14 points from Gault&Millau for 2026. Chef Floris Versluijs runs the kitchen without a fixed menu or wine list, so each evening follows what the kitchen decides on the night.
Versluijs cooks with a focus on structure and texture. He describes feeling food in the mouth as a step beyond tasting it. The kitchen works with circular, local and zero-waste principles, and the restaurant has a three-radish rating from the We're Smart Green Guide for 2026. The website names 2026 as the final year of operation, so the remaining evenings are limited.
Guests arrive at a set time for an aperitif and amuse-bouche, then move through ten courses. Dishes are finished in the open kitchen among the guests, and the chefs and sommelier explain each course at the table. Champagne is central to the meal, with bottles chosen from small, independent growers and imported directly by the restaurant. A non-alcoholic juice pairing is also available. Vegetarian dinners are welcome, and serious allergies can be accommodated if discussed in advance.
