The story
ONE, at ECI 17 in Roermond, cooks New Dutch cuisine inside a former factory hall on the Roer, and it holds a Michelin star (2026).
Owner-chef Edwin Soumang draws much of his produce from a kitchen garden beside the restaurant. Herbs, flowers and vegetables from that plot turn up across the menu. Reviewers single out dishes such as Zeeland yellowtail kingfish and rose veal loin, served with garden vegetables. Gault&Millau gave the restaurant 16.5 for 2026, describing a working sustainability concept built around the converted industrial building and its adjoining garden.
The dining room keeps the character of the old ECI factory, with concrete, steel and original architectural elements still visible. Guests choose from several menus. Sommelier Joost van Tegelen guides the pairings, which often draw on Limburg producers alongside wines from abroad. Chef's Table and private dining are also offered.
