The story
Gaar sits at Klinkenberg 173 in Meerssen, just outside Maastricht, and earned 14 points from Gault&Millau in 2026. Joachim Müller is chef and owner. His wife Myrthe runs the dining room.
The kitchen works in a classic French register, with Italian and Spanish influences and a playful nod to the East. Two dishes anchor the menu: a house-made terrine of Limburg pork or regional wild boar, and a crispy tortilla filled with Asian-marinated tuna. Recent reviews also describe a spring risotto with burrata and lemon, and veal sweetbreads with field mushrooms and parsnip. Vegetarian dishes are a regular part of the offer.
Sommelier Jurgen Houben and Myrthe choose terroir wines to follow the dishes, with a visible fondness for Spain's Priorat. Wines are priced on a fixed margin over purchase price. The list is reasonably priced. Guests can choose between two tasting menus or order à la carte.
The interior is classic, with abundant wood and sea-green walls. The Lekker500 guide has placed Gaar in its Top 500 every year from 2022 to 2026, and reviewers keep describing the atmosphere as relaxed and welcoming.
