The story
Onglet, at Wycker Brugstraat 27 in Maastricht, serves modern cuisine in the back of the former Schürmann butcher shop. Gault&Millau awarded it 13 points in 2026.
Guests ring the bell at the shop, then walk through the walk-in cooler to reach the old butcher's workshop. A marble bar with ochre stools runs alongside the open kitchen. Tables with white linen and built-in bench seating fill the rest of the room.
Chef Alan Oostrom builds the menu around meat, cooked on a Southbend grill for a pure flavor. Onglet itself appears as "Maastricht beefsteak", since many guests assume it is offal. Dishes are meant for sharing, and about 30 percent of the menu is vegetarian. Michelin lists the restaurant as Recommended for 2026.
A recent Lekker500 visit began with veal tartare, Bloody Mary gel and sourdough crisp. It ended with grilled onglet alongside veal cheek in balsamic. Co-owner Levy Smit acts as sommelier. Burgundy is his personal favorite, and he pairs it with much of the menu.
