The story
Oan Tafel in Leeuwarden, at Kerkbuurt 3 in Wergea (9005 NZ), is a Dutch cuisine restaurant that earned 14 points from Gault&Millau in 2026. Geert-Jan Vaartjes opened it in 2020 in the former Bar De Smidse, and the kitchen cooks with Frisian produce and global touches.
Geert-Jan Vaartjes grew up in a hospitality family in Wergea and cooked at De Librije, De Bokkedoorns and De Heeren van Harinxma before working abroad in Mauritius and Vietnam. The kitchen follows Dutch cuisine principles, with vegetables carrying most of the plate. Around 80 percent of the menu is vegetables, and much of the produce comes from the team's own kitchen garden.
Amuse-bouches arrive in an eggshell filled with chawanmushi and asparagus foam. Reviewers have called the dry-aged beetroot main, served with crispy buckwheat, kinnebak and beurre rouge, the highlight of the evening. The tasting menu runs four, six or eight courses, and vegetarian and vegan versions are available on request.
