The story

Bistro Aragosta in Leeuwarden: French bistro cooking and lobster

Bistro Aragosta is a French bistro at Voorstreek 12 in Leeuwarden, within the city canals, where Italian touches run through the kitchen. Michelin awarded it a Bib Gourmand in 2026 for good quality, good value cooking.

Lobster and classic bistro dishes

Lobster is the house specialty and comes three ways: as risotto with beaufort, warm with truffle mayonnaise, or as a thermidor gratinéed with Gruyère. The fish soup, served as it is in Marseille with crispy croutons, rouille and shaved Gruyère, is named by Lekker as a signature dish. The menu is reworked about every six weeks to follow the seasons.

Room and wine

The dining room is a stylish bistro with dark walls, linen-draped tables and armchairs. The open kitchen lets guests watch the cooks at work. The wine list draws on small producers, and each bottle is tasted before it goes on the list. Some of the wines are organic.

Aragosta is the Italian word for lobster. And lobster is certainly on the menu at Bistro Aragosta, offered in three variations: risotto beaufort, fresh shaved truffle, or thermidor. Additionally, there is a three-course tasting menu or a multi-course à la carte menu. Owner and chef Wouter Brandsma cooks Mediterranean cuisine, and he does it well. The menu states that you can order bread, butter, and water as a set. And we have no regrets about the warm Italian bread served with homemade sun-dried tomatoes, confit garlic cloves, cream butter with dates and lemon, and piccalilli. Also comes a small bowl of plain potato chips with Spanish Duroc ham that melts in your mouth. For the starter, we go for the classic, generously filled fish soup. A pure signature dish. Perfectly executed, just as you would eat it in Marseille, topped with crispy croutons, rouille, and Gruyère cheese. You will want to come back here for it. The accompanying wine is a Volnay Les Grands Poisots Domaine Stéphane de Sousa 2022. A surprising choice, but the layered yet powerful flavor of the soup pairs beautifully with this elegant Pinot Noir. Infectious is the enthusiasm of both sommelier Steije Sijbranda and Wouter Brandsema regarding the wines they pour. For instance, Wouter shares stories of a wine trip to Burgundy and the beautiful wines they discovered there. And they are eager to share these gems with their guests. For the wine pairing, you can choose between a standard and a luxury version. On a previous visit, there wasn't much choice when it came to dessert wines. That has been taken to heart, as we enjoy a fantastic Sauternes Château Rieussec 1998 alongside the Glace à la Banane, which is homemade ice cream made with brown butter, banana, and vanilla, served with caramelized pecans and honeycomb. The Top 100 list is now within reach.

Classic French. The key features of Aragosta in Leeuwarden. Along the long Pijpelaan, the open kitchen dominates and the duties of the white brigade seamlessly blend into those of the black brigade. Owner-chef Wouter Brandsema frequently visits the tables. We are immediately hit with a barrage of questions that leave us slightly stunned. Whether we want champagne, still or sparkling water, bread, or oysters. The menu offers an 'Aragosta formula' consisting of a choice menu or a 'Carte Blanche' menu made up of multiple courses. The dishes are listed in French on the menu with a Dutch description underneath. No amuse-bouches here; we start with 'Écrevisse', a classic salad of river crayfish tails from the Fryske Marren, served with clay potatoes, egg, cornichons, capers, and lobster mayonnaise. Beautiful, balanced, and a lovely light start. 'Soupe de poisson', fish soup served as in Marseille with crispy croutons, rouille, and shaved Gruyère. In this bisque, you can truly sense the quality of chef Wouter Brandsema. Words fail to do justice to this divine soup. Rosé 360 de Cavalier Côtes de Provence 2023 completes the experience. Because something goes wrong with our wine glass, we receive a complimentary house bite: 'Anguille fumée', lukewarm smoked eel from the Fryske Marren, served with creamy sauerkraut and smoked beurre blanc. We thought the soup couldn't be topped, but this too comes straight from culinary heaven. So tender and so flavorful. For the delightful dessert, a tart of caramelized nuts with house-made sorbet ice cream of crème fraîche and organic honey from the beekeeper, there is unfortunately no alternative to the recommended white port. All in all, a lovely spot right inside Leeuwarden's city canals.

Wouter Brandsema has taken up the culinary torch from Jan Gerard van der Wal and can now channel the skills he developed under the former chef into exquisite dishes for his expectant guests. The kitchen style builds on French classics with occasional excursions to the Mediterranean. Keywords: pure, simple, full of flavor. In the stylishly appointed bistro with dark walls, closely spaced linen-draped tables, and plush armchairs, a relaxed atmosphere prevails. Soft French chansons play in the background. To begin, a rich, meaty, homemade pâté made from 'Frysk' pasture-raised lamb with pistachio and green pepper. Accompanied by fresh strained yogurt, roasted pepper syrup, and garlic croutons. A flavorful start. Next, juicy lukewarm lobster with a foamy sauce and generously garnished with truffle. The dish was described differently on the menu, but you won't hear us complain. The main course falls somewhat short. Confit de canard, duck leg confited in goose fat, arrives on the plate in a hearty fashion with a thick mushroom jus and coarse chunks of beetroot. A touch more refinement would have been welcome. An Allegranza La Mancha Tempranillo from Castile-La Mancha is poured. Aged in oak with aromas of red fruit, light vanilla, and strong coffee. For dessert, a classic: île flottante. On the bill, we spot an error. Our driver's glasses of wine, half-filled, are charged as full glasses. Fortunately, this is promptly corrected.

Aragosta is the place to be for many thirtysomethings from Leeuwarden and the surrounding region. Patron-chefs Jan Gerard van der Wal and Wouter Brandsema have been open for just over a year, and their stylishly appointed bistro within the city canals—complete with comfortable armchairs, linen-draped tables, and atmospheric dark-tinted walls—is almost always full. French cuisine takes center stage here, complemented by delightful excursions into Mediterranean flavors. Ingredients are predominantly sourced locally, though products from France or Italy are used when necessary. The menu rotates regularly and is tailored to the seasons. We feast on tender sauerkraut with smoked eel and classic beurre blanc. Absolutely divine, particularly when paired with a glass of Bellingham Old Vine Chenin Blanc The Bernard Series 2020. The subsequent crispy-fried skirt steak with goose liver sauce is quickly becoming a house classic, and it is utterly delicious. Van der Wal acts as our host tonight, deftly using his expertise to forge engaging connections between guests, food, and wine. Do be prepared for a somewhat structured approach. There is a fixed charge for bread, butter, and water; guests are expected to order at least three courses; additional fees may apply; and there is a set price for a three-glass wine pairing that is hardly cheap. That said, the portions are generous, and the wine is poured liberally. A fantastic spot!

Owner-chefs Jan Gerard van der Wal and Wouter Brandsema have opened their Aragosta (Italian for lobster) within the city canals of Leeuwarden, where French and Italian cuisine take center stage. The ambiance is understatedly chic, featuring tables dressed in white linen, comfortable armchairs, subdued lighting, and an open kitchen. The menu changes regularly and offers multi-course menus alongside à la carte selections. Upon receiving our aperitif, we are served sea snails that we can pop out of their shells with a provided pin before dipping them into a delicious lemon mayonnaise. For starters, we have a buttery soft confit salmon fillet with sun-dried tomatoes, beetroot mayonnaise, and fried capers, followed by crispy baked veal sweetbread with a velvety goose liver sauce. The generous pour of Wolfberger's Gewürztraminer Signature 2019 completes the celebration. For the main course, we are impressed by the lamb neck with rosemary and garlic, braised in its own jus and then baked in a cocotte under puff pastry. This is perfectly matched with a Voché Rioja Crianza 2017. It is quintessential comfort food. The cheese board featuring Frisian, French, and Italian cheeses from Fromagerie Abraham Kef could use a few more accompaniments. We miss some nuts, grapes, or a bit of bread. The relaxed atmosphere created by Jan Gerard with his black-clad waitstaff, combined with the culinary talent of young chef Wouter Brandsema, ensures that Aragosta certainly deserves a place in this guide. Welcome to Lekker!
