The story
MANO Restaurant, at Bakenessergracht 109 in Haarlem, is a modern cuisine kitchen that earned a Recommended mention in the 2026 Michelin Guide. The restaurant sits in a historic corner building where the Spaarne meets the Bakenessergracht.
Kevin Kion and Daniël Damen have been friends since childhood and opened MANO in May 2021. Daniël concentrates on flavour, while Kevin shapes the presentation. The cooking starts from French technique with international influences, and the team's Japanese, Thai and Malaysian roots show up in the seasoning. The menu changes with the seasons and relies on local ingredients.
Past courses have included pan-fried scallops under a spicy bacon and shallot compote, and pan-fried cod with a green curry sauce. A dry-aged entrecote arrived with foyot sauce, a blend of béarnaise and meat jus. Dessert has featured a pandan siphon cake with coconut, yuzu and white chocolate.
The dining room holds about twenty guests and is dressed in white linen, with small vases of fresh flowers. Gault&Millau awarded the restaurant 15 points in 2026. The wine list leans toward European producers, many of them organic, and guests can choose a chef's menu with paired wines or order à la carte.
