The story
Bisque is a modern French restaurant in Groningen, at Verlengde Hereweg 46, where chef Niels Schievink and hostess-sommelier Sabrina Mans run the dining room. Michelin listed it as Recommended in 2026, and Gault&Millau gave it a score of 14 that year.
Niels Schievink cooks French food in a direct way, with strong flavors and no fuss, as the restaurant describes it. He and Sabrina Mans met at De Lindenhof in Giethoorn before taking over Bisque in 2023. Guests can choose between à la carte dishes and a tasting menu.
Reviewers singled out a pan-seared langoustine Royale with forest carrots and lime leaf. Open ravioli filled with oxtail, served with morel mushrooms and a rich jus, has also drawn praise. The meal often begins with a langoustine bisque, and the menu lists steak tartare and eel alongside the classics. Dessert might be a citrus soufflé with passion fruit.
The dining room uses white linen, modern art and a calm palette of muted tones. Sabrina Mans leads the service with a warm, knowledgeable manner, and Niels explains each dish as it arrives. Some visitors note the lack of a terrace and fairly modest portions.
