The story
The White Room, a modern cuisine restaurant at Dam 9 in Amsterdam, holds a Michelin star for 2026. The dining room sits inside the Anantara Grand Hotel Krasnapolsky on the Dam, in the former hall that was named 'De Witte Zaal' when it opened in 1885.
Signature chef Jacob Jan Boerma sets the direction, and Tristan de Boer runs the kitchen as chef de cuisine. Boerma favors fresh acidity, herbs and spices, and the restaurant pairs Dutch ingredients with influences from further afield. Gault&Millau awarded the restaurant 15.5 in 2026, citing the house identity Boerma has given it over the years.
The Gold and Green tasting menus are each priced at €185 and share a set of recurring ingredients. Gold opens with tuna with blueberry and shiso, and northsea crab with red curry and green apple, followed by kingfish with strawberry and wasabi. Green offers tomato with dill and smoked yoghurt, sweetcorn with shiitake and pickles, and agnolotti with pumpkin, kimchi and pecorino. A shorter lunch menu is served on Saturdays.
Gold leaf, white walls, chandeliers and comfortable banquettes frame the room, and the historic interior is listed as a monument. Both tasting menus can be paired with a classic wine pairing at €130 or a premium pairing at €200. The sommeliers select the glasses to follow each course.
