The story
Bridges is a seafood restaurant in Amsterdam at Oudezijds Voorburgwal 197, inside the Sofitel Legend The Grand, and it holds a Michelin Recommended distinction for 2026. The kitchen serves French-rooted International dishes with fish at the centre of the menu.
Executive chef Raoul Meuwese describes his cooking as classical French with international influences and a local twist. Fish forms the base of most dishes, and he cooks with regional products that are farmed or caught sustainably. Gault&Millau awarded the restaurant 16 points for 2026.
Tuna comes with white asparagus, almond and wild garlic. Langoustine is served with duck liver, celeriac, green apple and dashi, and caviar Perle Imperial arrives with potato and crème fraîche. The menu du chef runs from five to seven courses, and a vegetarian version is also offered. Guests who prefer to build their own meal can order à la carte, with a minimum of three dishes per person.
The restaurant occupies the former staff canteen of Amsterdam's old city hall. A 1949 mural by Karel Appel hangs at the entrance, hidden behind a screen for years before it was uncovered. The Chef's Table seats up to six guests for dinner, set in the heart of the kitchen, where diners can speak with the chefs about their dishes.
