The story
Kaagman & Kortekaas, at Sint Nicolaasstraat 43 in Amsterdam, is a modern Dutch kitchen that earned a Michelin Recommended mention for 2026. Chef Giel Kaagman and host Bram Kortekaas run the restaurant from a former industrial building on the street, and the menu follows what the season brings in.
Giel Kaagman forages in 't Twiske, the nature reserve Amsterdam sits beside, and many plates start with what he finds there. Wild ingredients appear often, from ice plant picked on Texel to offal, which reviewers note he cooks with evident fondness. Gault&Millau gave the restaurant a 15 for 2026, praising creative dishes and bright flavors from a chef who cooks by instinct.
The menu runs four to six courses, and recent reviews single out a cold asparagus broth with sea beans, glasswort and elderflower. The lamb course, with fillet, merguez, sweetbread and salsa verde, has also drawn praise. Diners finish with an extensive cheese cart and a hibiscus cookie served with vervain tea.
The open kitchen anchors the room, with bar seats set along it so guests can watch the cooks. Bram Kortekaas chooses the wine pairings, and the list gives a full page to the Jura. Acoustics are the weak point, and the room can get loud on busy evenings. The restaurant also hosts private dining for up to 34 guests, with its own open kitchen and team.
